If you have a VR ready PC, and a good amount of time to spend in VR, this is a great way to do it. There is a ton of incredible landscape and space to explore.
I have not had a chance to unlock an Achievement while in VR yet, but I think it will work. I will post an update later as I get more VR time in the game.
Here is my setup to get it running. DO NOT buy No Mans Sky from the Steam store if you are hoping to get your Achievements.

- Virtual Desktop client on my Quest 2 and the Streamer on my PC - https://www.vrdesktop.net/
Here is my process to get the game to launch in VR:
1. Open Steam
2. Open Virtual Desktop on the PC
3. Open Virtual Desktop on the VR Headset
4. From the headset Virtual Desktop connect to the PC
5. On the PC, open No Mans Sky
6. Select "Run No Man's Sky VR."
7. Click the OK button
The game may take a minute to load. While it loads, it is normal for the Steam environment to load. If it seems to be taking too long, peek under the headset to see if there any errors and to make sure the game didn't crash.

Confirmed that Achievements DO UNLOCK!
They don't pop up in the game but I could hear the chime and confirmed the unlocked achievement when I check my Xbox account.
